How does population data contribute to the modelled output? Can it show us the amount of people at risk near a certain coastal strip? or does the model just show population numbers?

Population is not included in the exposure index calculation. Here’s what the User Guide says about population:
When estimating the exposure of coastlines to erosion and inundation due to storms, it is important to consider the population of humans that will be subject to those coastal hazards. Based on an input population raster, The Coastal Vulnerability model reports the average population density (people per square kilometer) in a user-defined radius around each shore point.
What we often do is use the population values, along with the exposure or habitat_role values, to see how many people have high/medium/low exposure, or high/medium/low benefit from habitats.
